It turns out that there is a legal market for human bodies - dead ones. It's not the same as donating organs and could actually save the family a lot of funeral expense - if you were inclined to do such things. Here is a FAQ sheet that explains the whole business:

I knew of body brokers, because of one here who sells to the university. I'm sure they have other clients too!
